Artichokes omlet

I've tasted a piece of it! Someone should sacrifice for you...
Clean the artichokes and reduce them to segments, cook them in a pot with parsley and garlic for 30 minutes (they must be well browned), add salt and pepper switch off the fire and let it become cool.
Use a fork to mix the ingredients (eggs, cheese, salt and pepper).
Warm up a saucepan with some oil and pour down artichokes mixed with the egg; use a fork to crush the surface and to give it a form. Cook for a few minutes and then turn it to the other side!
This is a very critical passage. I suggest you to proceed with caution, you could burn! instead, choose the "technique" you know better.
Don't use too much oil to cook your omlet, otherwise it will drain when you'll try to turn it.
Lift a side of it with a fork, and see that there isn't too much oil, Put a dish on the omlet (it must be big as the pot diameter), turn upside-down the pot with the dish, and put the other side of the omlet in the pot. Seems easy, but pay attention!!
